Be a Star (in the kitchen)

I of course understand why they call this the season of good will. But surely it would be better to call it by its other name – the Season to Stuff Yourself Senseless? And it is in that sprit that we share with you today, a tutorial to create this fabulous, simple to prepare – yet jealous-makingly complex looking Pesto Star. Let’s get busy…

GET THIS:

  • 3 x 500g block Shortcrust Pastry £1.10 each Tesco
  • 2 x Green Pesto, 190g jar £2.30 each Tesco
  • Spoon for spreading
  • A small glass or teacup
  • Base of a cake tin, 9 inch, £8.77 Ocado
  • Rolling Pin, £3.40 Ocado
  • Sharp knife
  • Pastry brush, £5.45 Ocado

DO THIS:

  • Roll your pastry out, you want it to be roughly 2mm/3mm thick

  • Place your pastry on a sheet of baking parchment and trace round the edge of the base of a cake tin, and cut it to shape, to get a nice even circle

  • Spread your pesto over the dough, not too thick but a nice even spread

  • Repeat this step until you have three dough bases, covered with pesto and all neatly stacked on top of each other
  • Using a small glass or coffee cup, gently mark the centre of the circle

  • Divide the circle into eight, cutting from the marked circle, outwards. Remember to keep the middle circle area intact!

  • Then divide each section in half again, leaving you with sixteen equal parts – wow you are very good at fractions now!

  • Pick up two parts of the base, one in each hand and very carefully twist them in opposite directions

  • Repeat this step until all the parts are folded – and you are left with an eight sided star

  • Fold the ends of the base under itself to create a neat round shaped edge

  • Brush your star with a beaten egg before placing it in the oven
  • Bake for 25-30 mins at 180C/350F until golden brown

  • Leave to cool and get stuffing. Yourself. We had ours with a bowl of soup – YUM.
